Simple Salt and Pepper Crackers
You know this feeling, when you crave crackers. You just want that something salty and crunchy whether to eat them like that, to have them with cheese or wine or dip them in a Creamy Artichoke Dip for instance. And you know that feeling when you crave crackers and you don't have crackers! Well, with this Simple Salt and Pepper Crackers recipe, you won't ever have to feel that way again. Whenever you crave crackers, you now will have crackers! On the plus side, those also have a lot less salt and fat than those you buy at the store.
Ingredients (makes about 4 dozens):
2 cups flour, plus more for rolling
1/4 teaspoon freshly ground black pepper
2 tablespoons butter, chilled and cut into small pieces
In a large bowl, combine flour, sugar, salt and pepper. Add butter and rub with fingers to work it into the flour mixture until mixture resembles coarse meal. Gradually stir in milk (you may not need to use it all.) Turn mixture out onto a floured work surface and knead; form into a ball.
Divide dough ball in half. Working with one half at a time, pat each into a rectangle. Roll rectangles paper-thin and transfer each to its own baking sheet. Cut lightly (not necessarily all the way through) into 2-inches squares.
Bake 10 minutes. Switch position of sheets and continue baking until dough is starting to brown but is still mostly golden, about 5 minutes. Let cool on pans. Break into crackers and serve.
You can keep the crackers in an airtight containers for up to 2 days (but they won’t last that long!)
