This sushi recipe combines the richness of baked sardines with the earthy flavors of kale, pine nuts, and raisins, all complemented by the tangy sweetness of caramelized lemon. It's a unique and flavorful twist on traditional sushi.
Ingredients: 4 sardine fillets. 2 cups kale, finely chopped. 1/4 cup pine nuts. 1/4 cup raisins. 1 lemon, sliced. 2 tablespoons olive oil. Salt and pepper to taste. 4 sheets nori seaweed. 2 cups sushi rice, cooked. Soy sauce for serving optional.
Instructions: Before you start cooking, heat the oven to 375F 190C. Fillet the sardines and put them on a baking sheet that has parchment paper on it. Put chopped kale, pine nuts, and raisins in a bowl and mix them together. Put some of this mixture on top of each sardine fillet. A slice of lemon should be put on top of each sardine fillet. Put some olive oil on top of it. Add pepper and salt to taste. Place the dish in an oven that has already been heated up. Bake for 15 to 20 minutes, or until the kale is crispy and the sardines are fully cooked. While the sardines are baking, follow the directions on the package to make the sushi rice. A nori sheet should be put on a clean surface. Cover the nori with a thin layer of sushi rice, leaving a small edge at the top. Along the bottom edge of the nori, put a baked sardine fillet. If you want, you can use a bamboo sushi mat to help you roll the nori tightly around the sardine fillet. Do it again with the rest of the ingredients. Cut each sushi roll into small pieces that you can easily eat. If you want, you can serve it with soy sauce to dip it in.
