Whats wrong with your grilled cheese?

ok so funny story: its not that they go up in smoke or anything, its that i just consistently make them bad trying to find ways to make a good one. ive committed to not looking it up because the first time i was faced with making one for myself rather than having someone else make one for me i asked myself "how hard could it be to grill a cheese?" before making probably the saddest grilled cheese you could imagine. the thing is, i like to cook -- especially things on a stovetop or a grill. so i thought itd be easy. self explanatory. just like pan toasting some bread with a fried egg in it like i have for breakfast nearly every day. i was dead wrong. making a grilled cheese blind is no novice work. up until this point had i taken every grilled cheese with a perfectly consistent golden color across the bread, the perfect brown char -- not too dark -- and uniformly melted cheese my mom had made me for granted. things clicked for me right then. as i stood in front of a lightly smoking pan that contained my culinary sin, i felt my entire world shift. the universe as i had known and lived it for 24 years of my life once again felt like a strange unknowable place. i say this with no exaggeration, it was thrilling. i had been suddenly faced with an unknown i felt i could carve my own path into. i could hone something from nothing. in such a mundane moment any other would cast off as failure i had been spiritually knocked flat on my ass. i mean this in the gravest sincerity my body can muster: i now truly understood what the perfect grilled cheese aspiration in the sims 2 meant. in what i once thought to be a throwaway LOL so randumb XD joke is a powerful revelation about indulging a comfort you never knew you were taking for granted growing up -- but, for the first time, alone. it IS a journey to recreate a small comfort like that in such a specific way. who knows if you will ever be able to recapture it exactly? you could fall short, you could hit it once and never again, you could surpass it, or -- if youre lucky enough -- you could send someone else on that same journey to recreate a comfort you provided them. i dont even like grilled cheeses that much; i just had some bread, some cheese and i guess i was more hungry than i thought.
