Ingredients: 1 cup sushi rice. 4 sheets nori seaweed. 1/2 cucumber, julienned. 1/2 avocado, thinly sliced. 4 ounces sashimi-grade tuna. 4 ounces sashimi-grade salmon. 4 ounces sashimi-grade yellowtail. Soy sauce, for dipping. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Cook sushi rice according to package instructions and let it cool. Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange cucumber, avocado, tuna, salmon, and yellowtail in a row across the center of the rice. Carefully roll the sushi using the bamboo mat, applying gentle pressure to shape it into a tight cylinder. Slice the roll into bite-sized pieces using a sharp knife. Repeat with the remaining ingredients. Serve the rainbow sushi rolls with soy sauce, pickled ginger, and wasabi.
