This Basquaise Tart has a flaky puff pastry base, savory vegetables, and gooey cheese that all taste like they belong in the Basque Country. This dish is delicious and great for any event.
Ingredients: 1 sheet of puff pastry. 2 tablespoons olive oil. 1 onion, thinly sliced. 2 bell peppers red and green, thinly sliced. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 teaspoon dried thyme. Salt and pepper to taste. 1 cup grated cheese such as Gruyere or Emmental. Fresh basil leaves for garnish.
Instructions: Preheat the oven to 200C 400F. Place the puff pastry sheet on a baking tray lined with parchment paper. Heat olive oil in a skillet over medium heat. Add onions and cook until softened. Add bell peppers and garlic to the skillet. Cook until peppers are tender. Stir in cherry tomatoes, thyme, salt, and pepper. Cook for a few more minutes until tomatoes soften slightly. Spread the vegetable mixture evenly over the puff pastry. Sprinkle grated cheese on top of the vegetables. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and the cheese is melted and bubbly. Garnish with fresh basil leaves before serving.
