That Masale Bhaat from West India . I cooked in groundnut oil & tempered it with mustard seeds, curry leaves, garlic & onions. I added in the ivy gourds (tendli) & parboiled & cubed potatoes & stir fried till cooked but still crunchy. I added in red chilli powder & that Goda masala that I buy from Surekha. I added in a touch of tamarind pulp & jaggery & mixed well. I added in pre-cooked rice & fresh coriander & mixed well. Served hot garnished with freshly scraped coconut & fresh coriander. That Educational Thali - in the making . Contrary to popular belief, Indian food is not necessarily spicy & unhealthy. It's SO much more than Chicken Tikka Masala & Naan.
