Pastitsio

This recipe makes a casserole that is tasty and very filling. It has also been called Greek Lasagna. The smells from the cinnamon and tomato sauce are very appealing.
Ingredients
Macaroni:
8 ounces (half a box) small elbow macaroni
3 tablespoons melted butter
1/3 cup grated parmesan cheese
1/3 cup skim milk
1 egg, slightly beaten
Meat sauce:
1 pound ground beef
1 medium onion, chopped
1 (8 ounce) can tomato sauce
1 teaspoon salt
½ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground black pepper
Cheese Sauce:
4 tablespoons butter
2-4 tablespoons corn starch
¼ teaspoon salt
2 cups skim milk
1 cup cheddar cheese, shredded
1 egg, slightly beaten
1/3 cup grated parmesan cheese
Directions
Cook the macaroni per package directions, drain and set aside.
In the pot that was used to boil the macaroni put in the butter and melt it. Add the Parmesan Cheese, milk and the egg. Add the cooked macaroni and mix. Set aside.
In a large skillet cook the ground beef and onion. Cook until the beef is well crumbled, is no longer pink and the onion is translucent. Drain off the excess fat.
Add the tomato sauce, salt, cinnamon, nutmeg and pepper and mix. Set aside.
In a medium saucepan melt the 4 tablespoons of butter. Add the cornstarch and salt and mix. Slowly add the milk while stirring. Use a sieve to add the cornstarch to prevent lumps from forming. Stir the sauce for several minutes until it starts to thicken. You may need to add more cornstarch if it doesn’t thicken. Once it is thick remove it from the heat.
Place the egg in a small bowl and beat. Add some of the sauce to the egg to temper it. You don’t want a scrambled egg in your sauce. Then add the egg and Parmesan cheese and stir.
Heat the oven to 350˚
To assemble the pastitsio place a layer of half the macaroni on the bottom of a 2 quart oven proof casserole. Next add the meat sauce. Then add the rest of the macaroni. Pour the creamy cheese sauce on top. Bake uncovered for about 40 minutes. It should be hot and lightly browned on top.
Let it stand for a few minutes before cutting into it.
Notes
Adjust seasonings to your taste. Substitute ground turkey for the beef if you prefer it.
