A fusion dish called Palak Paneer Dosa takes the best parts of both South Indian dosa and North Indian Palak Paneer. It's a tasty and healthy way to start the day that will definitely please your taste buds.
Ingredients: 1 cup dosa batter. 1 cup spinach leaves, blanched and pureed. 200g paneer Indian cottage cheese, crumbled. 1 onion, finely chopped. 2-3 green chilies, finely chopped. 1 teaspoon ginger-garlic paste. 1/2 teaspoon cumin seeds. 1/2 teaspoon turmeric powder. 1/2 teaspoon garam masala. Salt to taste. Oil for cooking.
Instructions: Heat some oil in a pan and add cumin seeds. Let them splutter. Add finely chopped onion and saut until translucent. Add green chilies and ginger-garlic paste. Saut for another 2 minutes. Add turmeric powder, garam masala, and salt. Mix well. Add the crumbled paneer and saut for a few more minutes until well combined. In a separate bowl, mix the spinach puree with the dosa batter. Heat a non-stick dosa tava griddle and grease it with a little oil. Pour a ladleful of the spinach-dosa batter onto the tava and spread it into a thin circle. Cook on medium heat until the dosa turns golden brown and crispy on the edges. Place a portion of the paneer mixture on one half of the dosa. Fold the dosa over to cover the filling, creating a semi-circle shape. Press gently and cook for a minute until the filling is heated through. Repeat the process for the remaining dosa batter and filling. Serve hot with chutney or yogurt.
