Ingredients: 1 cup creamy peanut butter. 1/2 cup honey. 1/4 cup coconut oil, melted. 2 large eggs. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 3 cups gluten-free rolled oats. 1/2 cup shredded unsweetened coconut. 1/2 cup gluten-free chocolate chips. 1/2 cup chopped nuts e.g., almonds, walnuts. 1/2 cup dried fruit e.g., raisins, cranberries.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine the peanut butter, honey, melted coconut oil, eggs, and vanilla extract. Mix until smooth and well combined. Add the baking soda, gluten-free rolled oats, shredded coconut, chocolate chips, chopped nuts, and dried fruit to the bowl. Stir until all ingredients are evenly incorporated. Using a cookie scoop or spoon, drop spoonfuls of cookie dough onto the prepared baking sheet, leaving some space between each cookie. Gently flatten each cookie with the back of a fork or the palm of your hand. Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden brown around the edges.
