A dash of beer and a blend of savory spices turn plain refried beans into a flavorful and vibrant dish. These Drunken Refried Beans from Aggie's Kitchen are ideal for any fiesta or informal get-together. The traditional recipe is elevated to a whole new level with the addition of bacon fat, jalapeo, and fresh cilantro.
Ingredients: 2 cans pinto beans, drained and rinsed. 1/2 cup beer your choice of lager or ale. 1/4 cup bacon fat. 1/2 cup diced onion. 2 cloves garlic, minced. 1 jalapeo, seeded and finely chopped. 1 teaspoon cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 1/4 cup chopped fresh cilantro. Juice of 1 lime.
Instructions: In a skillet, heat bacon fat over medium heat. Add diced onion and cook until softened. Stir in minced garlic and chopped jalapeo, cooking for an additional 2 minutes. Pour in beer and let it simmer for 3-4 minutes until slightly reduced. Add drained pinto beans to the skillet, mashing them with a fork or potato masher. Season with cumin, smoked paprika, salt, and pepper. Continue to cook and stir until beans are heated through. Finish by adding fresh cilantro and lime juice. Stir well and adjust seasoning if needed. Serve the drunken refried beans hot as a side dish or as a delicious dip.
