Onigirazu is a twist on traditional Japanese onigiri, where the rice and fillings are wrapped in nori seaweed but formed into a sandwich shape instead of a ball. It's a convenient and delicious way to enjoy sushi flavors on the go.
Ingredients: 4 nori seaweed sheets. 2 cups sushi rice, cooked and seasoned with rice vinegar, sugar, and salt. 1 avocado, sliced. 1 cucumber, julienned. 4 slices smoked salmon or crab sticks. 4 lettuce leaves. Soy sauce, for dipping.
Instructions: Put down a piece of plastic wrap on a clean surface. On top of the plastic wrap, put a sheet of nori. Spread out about 1/2 cup of sushi rice on the nori sheet, making sure to leave some space around the edges. On top of the rice, put cubes of avocado, smoked salmon or crab sticks, and lettuce leaves. Add another layer of sushi rice on top and gently press down to pack it down. To make the sandwich tight, fold the edges of the nori sheet over the filling and use the plastic wrap to help you do it. Do it again with the rest of the sandwich ingredients to make 4 more. Let the sandwiches sit for a while so that the nori can soften and seal. Use a sharp knife to cut each sandwich in half. You can dip them in soy sauce.
