Easy Pork Tenderloin *Set Oven to 500 degrees *Weigh Thawed Tenderloin **See note at bottom. *In Baking Dish or Heavy Pot, place Tenderloin. I use a Le Creuset Dutch oven pot. *Drizzle with 2 Tbls Canola oil and generously coat with seasonings: Salt, Pepper, Old Bay, Paprika, Oregano, Brown Sugar, Spicy Rub…or come up with your own mix! *Turn to Coat. Repeat on other side of Tenderloin. *Bake at 500, covered with lid or tightly sealed with foil for 6 min per lb. *Next, leaving Tenderloin in oven. Turn oven off for 45 min or until instant read thermometer reads 135 degrees when inserted in center. If it needs more cook time, set oven for 250 degrees and check Tenderloin Temp every 10-15 min. *Remove from oven. Leave covered. Let rest for 5 min. Then carve as desired. *Use drippings to coat pieces, or make gravy. *Really great to use for Cuban Sandwiches! *We sometimes use Tenderloin pieces as a light meal or snack. Slathered with locally made mustards and peppered jelly. YUMMY! **Note: If you found a very large Pork Tenderloin, and it won’t fit into your baking dish/pot, you can cut it in half. Freeze half for use at a later date.
