Lamb with my cauliflower rice version of Mojardara (recipe below). Sometimes I get a bit obsessed with cooking certain meals...even if I don’t have the time. The payoff is plenty of leftovers for lunch’s (for days 😂)
This comes with a health warning though...it’s cauliflower, onions and lentils 😮🤦🏻♀️ a bad recipe for some people 😂 3 small onions - sliced and fried, put aside on kitchen roll (this is not healthy - you have to leave this out if still losing lbs but I love them 😋)
Tin of green lentils, blended or grated whole cauliflower, 1 tbsp cumin seeds, 1 tsp ground coriander, 2 tsp ground cumin, 2 tsp ground cinnamon, 1 1/2 tsp turmeric, salt, raisins.
Heat the seeds then spices...then stir in the lentils, cauliflower and raisins.
Stir for a few mins then stir in the onions. Tastes even better cold the next day 😍
