Ingredients: 2 cups of leftover holiday stuffing. 1 cup of diced leftover roasted vegetables e.g., potatoes, carrots, and Brussels sprouts. 1/2 cup of diced leftover cooked ham or turkey. 4 large eggs. Salt and pepper to taste. 1 tablespoon of olive oil. 1/4 cup of shredded cheese optional. Chopped fresh herbs for garnish e.g., parsley or chives.
Instructions: In a large skillet, heat the olive oil over medium-high heat. Add the diced leftover roasted vegetables and ham or turkey to the skillet. Saut for 2-3 minutes until heated through. Add the leftover holiday stuffing to the skillet and continue to cook, stirring occasionally, for another 2-3 minutes until it starts to crisp up. In a bowl, whisk together the eggs, salt, and pepper. Pour the egg mixture over the ingredients in the skillet. Stir gently to combine everything. Cook the mixture, stirring occasionally, until the eggs are fully cooked and scrambled, about 3-4 minutes. If desired, sprinkle shredded cheese over the top and let it melt. Ingredients: 4 eggs. 2 onions, finely chopped. 2 tomatoes, finely chopped. 2 green chilies, finely chopped. 1/2 teaspoon turmeric powder. 1/2 teaspoon red chili powder. 1/2 teaspoon cumin seeds. 2 tablespoons vegetable oil. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and green chilies. Saut until onions turn golden brown. Add chopped tomatoes and cook until they become soft and mushy. Now, add turmeric powder, red chili powder, and salt. Mix well. Break the eggs into the pan and scramble them with the tomato-onion mixture. Cook until the eggs are fully cooked and mixed with the spices. Garnish with fresh coriander leaves.
