Are they still viable sacrifices (well candidate for Roy) or does this make them ineligible?
I mean… I guess it really depends on whether they have a gate or not.

For Ed.
Yes, Edward is still viable as a candidate for sacrifice due to his original body being used as material for his homunculus one. Think of him as an inbetween of a human homunculus and the homunculi made from Father.
He's made from his human body so it doesn't disintegrate like say.. Lust's or Envy's bodies would.
Not only that but it's also why he's able to use his alchemy. So, yes, he's able to be used as a sacrifice.
For Al, I haven't REALLY decided fully if he would be or not. However, I think I'm leaning to a yes due to the nature of his homunculus body, while his original one wasn't used, the armour that was pulled into it still allows his soul to be tied to something not made from alchemy entirely.
This is also why Al can somewhat use alchemy as well.
If the armour wasn't part of the equation then I'd be more inclined to say no.
For Roy.
No, he's not viable as a sacrifice. Riza takes his place in that regard as the new sacrifice instead.
His body is entirely alchemically made. It will disintegrate when parts are cut off or if he were to die. Not only that but despite having his flames, he's not using alchemy for it even if it's the closest he probably has to alchemy.
He cannot perform alchemy and thus would not be able to see the gate.
How did Ed react to Al? Does Al being turned envy add more guilt to Ed’s plate because Ed’s whole

Ah, Envy Alphonse.
This one actually kick starts at the very beginning, Edward, in blind pain and dizzy from blood loss, tries to bind Al to the armour but accidentally reactivates the transmutation circle which brings back Alphonse!
Though, since the armour was dragged in along with the already failed transmutation before hand, there was material to work with for Al's new body! It was good he got it cuz Edward had to be taken to have his new stumps taken care of.
Edward, himself, does feel a lot of guilt with what originally happened of Al's body being taken as the toll but man is he confused about how they managed to get it 'back'. He doesn't remember the second go around of the transmutation due to his brain shutting it out to protect him as it was seen as pretty traumatic.
Their relationship isn't affected much at first since Al doesn't originally have a philosopher stone core, the blood seal he would've had on his armour is what powers him originally.
Think of it kind of like 03 Wrath where Wrath was pretty tame before he had the red stones. It's similar for Alphonse before he has a philosopher stone core that sort of kick starts the envy trait to be more surface.
That's when things get a little rocky, mainly because Al can't fully control it even when he's trying to work through it with Edward.
But it does crop up at times, especially with him not having his original body.
