All F&B outlets located in TFG properties are being evaluated with a view to transform these assets into standalone businesses. The process of transformation has started at Wyndham Dubai Marina under the guidance of Duncan Fraser-Smith, TFG’s Global Food& Beverage Director. The aim of this transformation is to offer guests a wide range of unique dining experiences and enhance the restaurants’ appeal to local diners.
To meet these objectives, Wyndham Dubai Marina has renovated its three main F&B concepts. The first step of the transformation was Alloro, an Italian restaurant that offers its customers Mediterranean food in calm and relaxing environment. The second was Dubai’s first smokehouse, The Blacksmith, that was opened in the hotel under the guidance of pit-master Orelle Young. The final step of the transformation is the opening of Hello Café that offers guests a unique concept that takes them on a “journey of coffee”.

The importance of F&B outlets to hotels’ overall profitability has long been a matter of debate. In the past hotel restaurants played a supportive role and were aimed at providing food only for their guests. Today F&B industry has become a stand-alone business that generates great revenue attracting external and internal customers.
To run F&B business well, the owners should know the factors affecting hotel restaurant’s profitability. High food quality and excellent service standards have top priority, because they generate customer’s loyalty. They are followed by the right geographic location and understanding of local needs. These factors help in attracting external diners to the restaurants. Another success factor is an original F&B concept that allows winning new customers from the first day. In addition, more and more hoteliers use different types of operating models such as franchising, leasing, third-party and in-house management to do F&B business more efficiently.
