One Minute Pasta Sauce
Although I live in Puerto Rico right now, I am through and through a New Yorker -- which means my go to response is quick and easy. How I approach my food is no different.
Last night, I was hungry and although I had some Puerto Rican root vegetables sitting in the fridge from the day before, I wanted something else. Something fresh -- but I wanted it fast. I opened the pantry closet and boom! Gluten free brown rice pasta was staring at me! I threw those bad boys in a pot of boiling salt water and went on to decide if I was going with a bottled vegan Alfredo sauce or a one-minute homemade tomato sauce. FRESH One Minute Pasta Sauce won and here's the recipe...
*Please note: This, like most of my recipes, can be varied according to taste so you will find that I will only give you ballpark measurements*
One Minute Pasta Sauce
Tools/Ingredients:
Magic Bullet or other blender
Grape tomatoes
Olive oil
Balsamic Vinegar
Brown sugar (optional)
Oregano (dry)
Basil (dry or fresh)
Pepper
Parsley (dry)
1. Take two handfuls of tomatoes (want more sauce? use more tomatoes) and throw them in your blender.
2. Add about 2 tablespoon of olive oil and a tablespoon of balsamic vinegar.
3. Add in your dry spices (if you have other dry spices you enjoy feel free to throw them in and experiment). I used a pinch of oregano, parsley and pepper and 3 pinches of basil. If I had fresh basil I would have thrown a few leaves of that in the blender as well. (I LOVE BASIL!) I did not use sugar this time, but when I am looking for a sweeter sauce I like to throw in a pinch or two of that too.
4. If you are using a Magic Bullet, put that baby to blend for 60 seconds and your sauce is done! Other blenders may require a few more passes but it all depends on the strength of the equipment.
Putting It All Together
1. Pasta is ready in 15 minutes (if you throw it in once the water is ALREADY boiling).
2. Drain the pasta and place it in a skillet.
3. Throw in a handful of fresh veggies or leafy greens (I used baby spinach).
4. Pour your One Minute Pasta Sauce onto the noodles and veggies.
5. Put skillet on low heat (unless you really want to cook the veggies -- which I don't recommend because you don't want to cook all the nutrients out) and sauté all the ingredients together.
6. When the veggies and sauce are warmed to your liking remove skillet from heat.
7. Enjoy!
Honestly, the One Minute Pasta Sauce is so good, I've had days where I simply mixed it in with my pasta and skipped the skillet part. I'm also not a big fan of super hot food or drinks. Whatever tickles your fancy is fine by me. I just hope you enjoy this tasty, super quick meal as much as I do!
