Enjoy the smooth, spiced goodness of homemade eggnog. Wonderful for holiday parties or cozy nights by the fire.
Ingredients: 4 large eggs. 1/3 cup granulated sugar. 2 cups whole milk. 1 cup heavy cream. 1 teaspoon vanilla extract. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 3/4 cup rum or bourbon optional.
Instructions: Put egg whites and yolks into two different bowls. Whisk the sugar into the bowl with the egg yolks until the mixture is smooth. Put milk, cream, vanilla, nutmeg, cinnamon, and cloves in a saucepan and mix them together. Turn down the heat until it starts to steam. Slowly whisk in a little of the hot milk mixture to the egg yolks to temper them. Then slowly whisk in the rest of the milk mixture. Put the mixture back in the saucepan and cook it over low heat while stirring it all the time for about 5 minutes, or until it gets a little thicker. Don't boil. Take it off the heat and let it cool down. Whisk in rum or bourbon if you want to. Beat the egg whites in a different bowl until they form stiff peaks. Add the egg whites slowly to the cooled mixture. Put it in the fridge for at least two hours before you serve it. If you want, you can serve it cold and top it with a sprinkle of nutmeg.
