Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1 tsp baking soda. 1/2 tsp salt. 3 eggs. 1/4 cup honey. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1 cup dried figs, chopped. 1/2 cup water.
Instructions: Set the oven temperature to 175C 350F. Spread coconut oil in a loaf pan. Add water and chopped figs to a small saucepan. Simmer over medium heat for 5 to 7 minutes, or until figs are tender. Take off the heat and allow to cool. Combine the almond flour, coconut flour, baking soda, and salt in a sizable mixing bowl. Beat eggs, honey, melted coconut oil, and vanilla extract thoroughly in a separate bowl. Mixing the wet and dry ingredients together will create a smooth batter. Once the fig mixture has cooled, fold it into the batter until it is evenly distributed. Transfer the mixture into the loaf pan that has been preheated and level it out. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven. Before slicing, let the bread cool in the pan for ten minutes before moving it to a wire rack to cool completely.
