Oven roasted artichokes: This is incredibly simple to make. Reminds me of long hot summer afternoons in Spain with my family when I was a kid. Also when I’ve had vegan moments in my life this is pretty much the only option at most barbecues.
Grab several artichokes, make sure to rinse them well, douse in olive oil and chopped garlic, put the juice from a quarter lemon and leave the rind in, wrap in tinfoil and pop in the oven for 45 minutes on a high heat.
