Ingredients: 1 cup almond milk. 1/4 cup vegan butter, melted. 2 1/4 teaspoons instant yeast. 2 tablespoons organic cane sugar. 1/2 teaspoon salt. 3 cups all-purpose flour. Extra vegan butter for brushing.
Instructions: Warm almond milk until lukewarm, not hot. In a mixing bowl, combine almond milk, melted vegan butter, instant yeast, sugar, and salt. Add flour gradually, stirring until a dough forms. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size. Punch down the dough and divide into 12 equal pieces. Shape each piece into a ball and place in a greased baking pan, leaving a little space between each roll. Cover and let rise for 30 minutes. Preheat oven to 375F 190C. Bake rolls for 15-20 minutes or until golden brown. Brush the tops of the rolls with melted vegan butter while still warm.
