Processing Fresh Turmeric
I got some fresh turmeric from my local Indian supermarket. They boost the immune system, aids digestion, has anti-inflammatory properties - not to mention a great source of natural coloring for fiber dyeing or soap making.
Fresh roots release a softer, sweeter, and floral aroma. You can use fresh turmeric in juicing, teas, cooking for sure, but to turn it into powdered spice, it takes a little more processing.
The roots needs to be “cured” through boiling (~45min) which release a very deep, complex, strong, and earthy aroma. Cooking the root also turns it soft, making it easier to slice. I dried the slices in a bag AWAY from sunlight because it may bleach and degrade the root. When dried, simply use the spice grinder to turn it into powder or keep it as slices!
I realize now that store bought crap is so flat and tasteless. The quality of hand processed turmeric…unbelievable.
