These BBQ Meatball Street Tacos are a delicious twist on traditional street tacos. The juicy meatballs are infused with BBQ flavor and topped with fresh veggies, cheese, and creamy sour cream.
Ingredients: 1 lb ground beef or pork. 1/4 cup breadcrumbs. 1/4 cup onion, finely chopped. 1/4 cup parsley, chopped. 1/4 cup BBQ sauce. 1 tsp garlic powder. 1/2 tsp salt. 1/4 tsp black pepper. 8 small corn tortillas. 1 cup shredded lettuce. 1/2 cup diced tomatoes. 1/4 cup shredded cheddar cheese. 1/4 cup sour cream. 1/4 cup chopped fresh cilantro. 1/4 cup sliced green onions.
Instructions: Put chopped onion, parsley, BBQ sauce, garlic powder, salt, and black pepper in a bowl. Add the ground meat and mix it all together. Shape the mixture into meatballs that are about an inch across. Set a grill or skillet over medium-high heat. Cook the meatballs, turning them over every so often, for about 8 to 10 minutes, or until they are browned and cooked all the way through. For about 30 seconds on each side, warm the corn tortillas up on the grill or in a pan. To put the tacos together, put a few meatballs on each tortilla. Shred lettuce, diced tomatoes, sour cream, cilantro, and green onions; then put them on top. Add more BBQ sauce on top to make it taste even better.
