The rich, decadent flavor of salted caramel is combined with the sweet, fruity flavor of ripe bananas in these delicious banana donuts with salted caramel glaze from the Accidental Happy Baker. Ideal for dessert or breakfast!
Ingredients: 2 ripe bananas, mashed. 1/2 cup granulated sugar. 1/4 cup unsalted butter, melted. 1 egg. 1 tsp vanilla extract. 1 1/2 cups all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup buttermilk. Oil for frying as needed. 1 cup granulated sugar for coating. 1/2 cup heavy cream. 1/4 cup unsalted butter. 1/2 cup packed brown sugar. 1/2 tsp salt. 1 tsp vanilla extract.
Instructions: Combine the mashed bananas, melted butter, egg, vanilla extract, and 1/2 cup granulated sugar in a bowl. Mix the flour, baking soda, baking powder, and 1/4 tsp salt in a separate bowl. Add the dry ingredients to the banana mixture gradually, starting and ending with the dry ingredients and alternating with buttermilk. Blend until barely combined. Heat oil in a large pot or deep fryer to 350 degrees Fahrenheit 175 degrees Celsius. Ladle spoonfuls of the banana batter into the heated oil, and cook for two to three minutes on each side, or until golden brown. blot with paper towels. Coat the warm donuts by rolling them in the leftover powdered sugar. In a saucepan, combine heavy cream, 1/2 tsp salt, brown sugar, and 1/4 cup unsalted butter to make the salted caramel glaze. Over medium heat, bring to a simmer while stirring continuously. Take off the heat and mix in a teaspoon of vanilla extract. Give the caramel a little time to cool. Allowing the excess to fall off, dip each banana donut into the salted caramel glaze. To set and cool, place the glazed donuts on a wire rack. Present and savor!
