Truly an Icon, he is the one who gave Indian food a fine dining attitude. It took time for me to understand him and his food. Initially, I only saw a chef who was all over the place, doing food that didn't look like it was supposed to look like, as opposed to everything I knew till and he didn't work like the then the chefs I had worked with all my life. Well-groomed, wearing a pure white chef jacket, fully buttoned up and plating food in such synchronised manners and here is a man who didn't believe in these kind of rules. His food never really food any traditional cooking, the yoghurt explosion, eaten in one bite with a burst of flavours exploding in your mouth, french oysters served with mustard ice cream this was his menu 8 years back. I can't even imagine his new menu, an emoji menu from his new restaurant, the whole experience of dining, can we call it dining anymore? Shouldn't there be a new terminology for experiencing food as such as his? He was a rebel in the kitchen, a rebel in his life, he fought his way through life at each stage, a true inspiration to people like me, I say people like me because not everyone can digest something or someone that doesn't conform to the society or its traditions. He opened my eyes to being progressive, not just about food, but about looking at life. You need to constantly learn, evolve, and that is what he is all about, being unpredictable and a fighter, a true rebel in all senses. What if I say I’m not like the others?
