Country Heat Day 5 done! 💃💃 Most people take Sunday as a rest day. But I am 5 days in and I don't want to loose my momentum. It's easy to take one day off and next thing you know it's been two weeks since you worked out. My goal is to do #CountryHeat every day for the entire month of #September. If you haven't tried #CountryHeat yet, what are you waiting for??? It is so much fun, it doesn't even feel like working out. Plus you can burn some serious calories. Yesterday at work, we got to have Stacie treats to celebrate my upcoming birthday. The girls I work with are so fabulous. Because they knew I was eating healthy, they surprised me with some healthy homemade muffins. Guys, if I would have seen the recipe prior to trying them, I probably wouldn’t have eaten them. Sounds weird and ify. And they are Gluten Free, Dairy Free and Sugar Free. Who wants a muffin like that???? Let me tell you, these things were scrumptious!! 😋😋I snarfed down two very quickly. Because they were for my bday, they made me extra to take home. Brandon tasted them and really liked them. He said we needed the recipe to make some. He has no idea they are healthy and we aren't telling him 😈HHEHEhehehehehe. They are so yummy I just have to share with the world. A tip is to start with the dates. You can make a batch, put a few in fridge to eat immediately and the rest in freezer. Just take from fridge and heat a couple of seconds and YUM. Can I just say I work with some of the most favs lupus girls😍 Carrot Banana Muffins ¾ c chopped nuts (walnuts, macadamia, pecan 1 ½ c shredded carrot or zucchini ¼ c melted coconut oil 1 tsp vinegar 3 eggs 3 ripe bananas 1 c pitted dates (cranberries or apricots) 1 Tbl cinnamon 1 tsp salt 2 tsp baking soda 2 c almond flour Blend oil, vinegar, eggs, bananas, & dates in food processor Pulse in dry ingredients until just mixed Fold in carrots and nuts.
