This unique take on a classic margarita combines tropical flavors with healthy greens, eggs which are high in protein, and sweet yams to make a drink that is both refreshing and filling.
Ingredients: 1 cup tequila. 1/2 cup triple sec. 1/4 cup lime juice. 1/4 cup orange juice. 1/4 cup pineapple juice. 2 tablespoons agave syrup. Handful of fresh spinach leaves. 2 eggs. 1 small yam, peeled and diced. Ice cubes.
Instructions: In a blender, combine tequila, triple sec, lime juice, orange juice, pineapple juice, agave syrup, and spinach leaves. Blend until smooth. In a separate pan, fry the eggs to your desired doneness. In another pan, saut the diced yams until they are cooked through and slightly crispy. Fill glasses with ice cubes. Pour the blended margarita mixture into the glasses. Garnish each glass with a fried egg and a spoonful of sauted yams. Serve immediately and enjoy!
