Ingredients: 4 slices of Keto pound cake. 1 cup mixed berries strawberries, blueberries, raspberries. 2 tablespoons butter, melted. 1 tablespoon erythritol or preferred keto-friendly sweetener. Whipped cream or coconut cream, for serving optional.
Instructions: Preheat a grill or grill pan over medium heat. In a small bowl, mix melted butter and erythritol. Brush both sides of the pound cake slices with the butter mixture. Place the pound cake slices on the grill and cook for 2-3 minutes per side, until grill marks form. Remove the grilled pound cake slices from the grill and let them cool slightly. Top the grilled pound cake slices with mixed berries. Serve with a dollop of whipped cream or coconut cream if desired.
