The OG pancake chains would be the soft fluffy, airy type of pancakes by "Shiawase no Pancakes" or Wobbly and Jiggly pancakes by "Gram."  . . . Gram is one of the pancake chain cafes in Japan and is known for its premium soufflé pancakes. The texture of the pancake is very similar to Japanese cheesecake, yet very airy and soft and almost soufflé-like.  . . . Soufflé pancakes differ from other types of pancakes because of the way they are mixed. Instead of just whisking all the ingredients together, the eggs are separated, and the whites are whipped before being folded in gently, so when cooked, the pancakes puff up. Hanabusa Cafe is the perfect spot for the fluffiest souffle pancakes

Located in Kensington Market, Hanabusa Cafe is your new go-to spot for the fluffiest souffle pancakes in Toronto. I first came here back in April when it was still fairly new and the crowds were insane. Since I had such a great first experience, I just had to come back a month later to get better photos of this cute cafe and review their authentic souffle pancakes. 

The first thing that captures my attention is their interior design. I absolutely love the white and gold furniture, and marble top tables they have. The little plants placed throughout the cafe gives a cute and aesthetically pleasing touch. The cafe is very bright and clean, which makes the perfect spot for catching up with friends or a cute little date. 

Hanabusa Cafe opens daily at 11am , except Monday. I definately suggest coming here early on a weekday so you can take your time snapping photos and savour your pancakes. There’s a good selection of pancakes, drinks and other desserts as well. Price is reasonable and all the staff are super friendly. Keep in mind, the pancakes are made fresh when you order so it takes around 20 minutes for them to make it. This is the perfect time to walk around the cafe and take lots of photos.

I ordered the original souffle pancake and a latte. Portions are great for the price and taste is lovely. The latte pairs perfectly with the pancakes, and the pancakes are super fluffy and airy. The original pancake comes with 3 pancakes, a scoop of whipped cream and some fruits on the side. I’m personally not a fan of super sweet desserts so this is perfect. The pancakes have more of an eggy taste to it which makes it a personal favourite. 

Overall, I absolutely love this cafe ! From the lovely interior design to the delicious fluffy pancakes, Hanabusa Cafe is definately a must go if you’re in the Kensington area...or not in the area. These pancakes are worth going all the way to Kensington Market for... it’s that good! Looking forward to my next visit and trying some of their other food from the menu  ♡
