These Hazelnut Coffee Ice Cream Sandwiches are the perfect combination of rich and nutty hazelnut cookies with creamy coffee ice cream. A delightful treat for coffee and ice cream lovers!
Ingredients: 1 cup hazelnuts, toasted and chopped. 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 tablespoon instant coffee granules. 2 cups coffee ice cream.
Instructions: Preheat your oven to 350F 175C and line two baking sheets with parchment paper. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Using an electric mixer, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract to the butter mixture, mixing until well combined. Dissolve the instant coffee granules in 1 tablespoon of hot water, then add it to the butter mixture. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Fold in the toasted and chopped hazelnuts into the dough. Divide the dough into two equal portions and shape each into a log about 2 inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 1 hour to firm up. Once the dough is chilled, preheat your oven to 375F 190C. Slice the dough logs into 1/4-inch thick rounds and place them on the prepared baking sheets. Bake the cookies for 10-12 minutes or until set. Allow the cookies to cool completely on a wire rack. Take the coffee ice cream out of the freezer and let it soften slightly. Scoop a generous amount of coffee ice cream onto the flat side of a cookie, then top it with another cookie to make a sandwich. Repeat the process with the remaining cookies and ice cream. Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. There are rolled oats, all-purpose flour, baking soda, and salt in a medium bowl. Mix them together with a whisk. Melt the butter and mix it with the white sugar and brown sugar in a different large bowl until the mixture is smooth. Add the egg and vanilla extract to the butter mixture and mix them well. Slowly add the dry ingredients to the wet ones, mixing only until everything is well mixed. The chocolate chips and chopped hazelnuts should be carefully mixed into the dough. Place round tablespoons of dough on the baking sheet that has been prepared, leaving some space between each cookie. Press down a little on each cookie with your fingers or the back of a spoon. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
