Ingredients: 1 cup quinoa. 2 cups vegetable broth. 1 lemon juiced and zested. 2 tablespoons olive oil. 2 cloves garlic minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Rinse quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until liquid is absorbed. In a skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant. Add cooked quinoa to the skillet, stirring to combine with garlic. Add lemon juice, lemon zest, dried thyme, and dried rosemary. Mix well. Season with salt and pepper to taste. Continue cooking for an additional 2-3 minutes. Garnish with fresh parsley before serving. Serve hot and enjoy!
