Ingredients: 2 boneless, skinless chicken breasts. 2 cups mixed salad greens. 1/2 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 1/4 cup corn kernels fresh or canned. 1/4 cup black beans, drained and rinsed. 1/4 cup shredded cheddar cheese. 1/4 cup BBQ sauce. 1/4 cup buttermilk. 2 tablespoons mayonnaise. 1 teaspoon dried dill. 1 teaspoon garlic powder. Salt and pepper to taste.
Instructions: Season the chicken breasts with salt and pepper. Preheat your grill or grill pan to medium-high heat. Grill the chicken breasts for about 6-7 minutes per side or until cooked through, basting with BBQ sauce during the last few minutes of grilling. Remove the chicken from the grill and let it rest for a few minutes before slicing it into strips. In a small bowl, whisk together the buttermilk, mayonnaise, dried dill, garlic powder, salt, and pepper to make the ranch dressing.
