It wasn't a conscious choice. After getting kicked out of the Jedi Order the ship that Theron was on got captured by pirates. Due to him being a kid he was sold into slavery to a Sith.
Officially on Republic records Theron Shan is missing and later on declared dead. This is actually how Jace finds out about Theron's existence which leads to him having a big fight with Satele. No one knows what happened to him and Theron wants to keep it that way.
