Reappraising Jelly Ear fungus. The storms have knocked a few Elder trees out on our walk and there are Jelly-Ears-a-plenty. I’m not sure about them and they seem like hard work but as someone who eats a mainly Keto diet, I’m always on the look out for low carb thickeners for stews and soups.
