Khao Suey
This is a recipe passed down to me by my mother and one which is very close to my heart. The low prep + cooking time makes it an instant hit! While the dish is traditionally Burmese, here is my take on it.
Ingredients: 500gms of diced boneless chicken 3 big onions Small bunch of spring onion 1 cup of fresh coriander 1 cup of garlic cloves 1-2 lemons 3-4 green chillies 2 packets of veg/egg hakka noodles 1 tbsp of ginger paste Salt Oil Sugar 1tbsp of red chilli powder 200ml of coconut milk
Process: (Refer to the pictures to see how the condiments are kept separated. 1. As this dish is served with a variety of raw condiments, we will start with getting them ready. Take 2 whole lemons and slice them into 4 quarters each. Take the 3-4 green chillies and chop them. Now keep these aside in a small bowl. 2. Take some fresh coriander and chopped it finely. Take the small bunch of spring onion and chop it up finely. Keep both of these chopped ingredients aside in separate bowls. 3. Take one big onion, slice it thinly and then caramelise it in a pan with some oil and sugar. Once the onions are soft and brown, remove from heat and keep aside in a bowl. 4. The garlic cloves and chop them finely. Then fry these in a pan with some oil. Once they are nice and crisp, remove from heat and keep aside in a bowl. 5. Take the veg hakka noodles in a big pot, add some water, a pinch of salt and a few drops oil and then boil the noodles. Once the noodles are cooked, remove from heat, drain the water, rinse with cold water and keep aside. 6. Take the 2 big onions and put in a grinder mixer and grind to a fine paste. Take a frying pan, add some oil and then add the onion paste. Fry for 8-10 minutes and then add in 1 tbsp of ginger paste. Fry till the raw smell of onion and ginger goes away. 7. Now add in the diced chicken and fry till the chicken is half cooked. Now add in the red chilli powder and fry till the chicken is completely cooked. Cover the pan with a lid so that the chicken releases water and gets cooked in the steam. 8. Now add 200ml of coconut milk (stir it well before pouring in so that there are no lumps) and around 50ml of water. Continue to cook the chicken in the coconut milk, by covering the pan with a lid. Check occasionally to make sure the chicken is completely cooked through. At this stage, the gravy (coconut mil + water) may have reduced a little, which is okay. Add salt before removing from heat. 9. Serve the chicken hot with the noodles. As depicted in the picture, the chicken dish is meant to be mixed with the noodled and then each of the condiments are to be added in quantities appropriate to individual taste. Give the entire bowl a mix and enjoy!
