The Anarchy of the Kitchen
It seems eerily quiet Every time I step out the back door and into the alley There's no banging, no roaring of hood fans No sounds of oil burning right at it's smoking point that static of the fryers plays a never ending drone We were all promised at least one major fire hazard
Sitting on milk crates covered in the dirt of the alley and dripping with the grease inside the door My cigarette tells a story in dancing smoke Finding peace of mind in five minute meditation and all I can think about is checking on the sauce Some days I feel like I can't trust anyone to do the right thing
Head in hands, and my nicotine paper still hangs from my lips a black apron, covered in an assortment of different sauces and glazes my arms covered with little droplet burns from cleaning a grill Sometimes I get to show off all that fancy shit I learned in the big city I never was one to do good in school, I need things hands on
There's two ways to reach the goal and one's a scam and the other's the truth You can't learn what you don't experience your diploma is as good as my twenty years So let's shake on it and end this final conversation
I can sometimes hear the shouting and the yells As if I held a cup to the door There is something beautiful about the chaos and is it really chaos if everything is timed just right? Planned chaos, the anarchy of the kitchen The last refuge for the freaks
I take the second needed to catch my breath and then to quickly lost it again Before I stand up and brush myself off and yell Yes Chef
It's time to get back inside The only place I've ever really felt alive
Yesterday was a truck day. Note the sweat on my chin. Getting to work at 6am to put hundreds of pounds of stuff on shelves and overhead really gets the day rolling quickly. Who needs a gym when you work at Chipotle?
The Fryer Has an Attitude and Other Kitchen Truths
Life in the kitchen is not glamorous, but it is a kind of wild theatre that only those of us behind the swinging doors truly understand. As a Kitchen Manager and line cook, my days are measured in ticket times, fryer baskets, and the occasional existential crisis over whether I salted that dish twice or not at all.The grill hisses like it has an attitude problem, the fryer spits like it is personally offended by potatoes, and the prep line stares back at me with the cold eyes of fifty pounds of onions daring me to cry. Spoiler: I cry. But not out of weakness, out of onion warfare.Somehow, I juggle it. I manage chaos with a spatula in one hand and a towel in the other, calling out orders like a battle commander while secretly praying no one adds a complicated substitution at the last second. It is a dance of fire, knives, and questionable music playing too loudly from someone’s phone in the back. And yet, there is magic in it. There is pride when the plates come back clean. There is camaraderie when the rush hits and we all move as one, like some messy, sauce-splattered symphony. There is the quiet victory of a perfectly seared steak or the artful toss of a pizza dough that actually lands where it should. My life as a Kitchen Manager and line cook is equal parts comedy, exhaustion, and stubborn passion. It is sweat on my brow, burns on my arms, and laughter tucked between the chaos. It is the knowledge that while the world eats in comfort, I stand in the fire to make it happen. And yes, I still find time to sass the fryer when it spits at me.
[...as a kitchen manager... Yes.]
My FEET hurt so bad ALL the TIME owwwwww I don’t know how to make it not bad. Without spending $364959273 on a pair of nice and supportive shoes made for plantar fasciitis? I’m convinced all kitchen shoes are Bad
