Our Chaga @baerbucha-kombucha going into bottles!
Since there are more & more Kombucha Sets available on the market, we have decided to compare our Kombucha Set with some other Kombucha Sets that are currently available on the market. This will hopefully steer you towards purchasing our Kombucha Set, as we think it is the best one that is available out there. Below, you will find out why we think so! One of the first differences that we have discovered is the size of the main brewing jar, especially in reference to the overall price of the set
After writing the four parts of Kombucha History, some additional information was sent to me by Reetta Näätänen from Finland. (For which I am grateful). This particular post will be updated in the future, if additional information comes out, or if it's sent to me in the future. Enjoy Reetta's post! ....... KOMBUCHA – TRUE OR FALSE? NB. In this text I use the term microbe drink to make a difference from the original Japanese kombucha drink that is made of kelp. Sources of information are linked i
Continuing with Kombucha history, we move into the second time span which covers the time from 1913 till about 1995. The reason that I have used these cut off dates is quite simple. Starting around 1913, we finally have some historical documents that relate to Kombucha. Also, Kombucha (as a drink) stays practically unchanged till 1995. It is a home brewed drink, made with a higher amount of sugar & it is consumed as a folk medicine. Even the commercial brands that appeared in Germany at the begi
My name is Tadeusz Zagrabinski & I am the founder of Bärbucha Kombucha in Berlin, Germany. I had recently presented a short history of Kombucha during the Virtual Kombucha Summit that took place in November, 2020. Since I only had a limited time frame to do that, I have decided to expand on this topic, in this & in the upcoming posts. It is not an easy topic to research, as the sources of information that we have are scarce, especially when it comes to times before 1913. Another thing that makes
One of the recent favorites in our Specials line is made with the delicate green tea called Jasmine White Monkey. The tea is well known for its quality and rarity. It's light & it has a distinctive delicate sweet & refreshing flavor with a honey finish. It is made from delicate green tea leaves grown in the Taimu Mountains in Fujian, China. Only those leaves & buds are used that were picked during the first two weeks of the season. During drying, then the leaves are mixed with delicate Jasmine
Pi Lo Chun or Bi Lo Chun (Bilochun) are just some of the names for Xia Sha Ren Xiang tea. The literal translation of the name is "green snail spring" & it belongs to a famous green tea, originally from originally grown in the Dongting mountain region near Lake Tai in Suzhou, Jiangsu, China. It is a tea that is plucked & processed in Spring & the quality of this tea can differ substantially. It is usually available in 7 different grades. As a tea, it has some very pleasant fruity & nutty notes wi
This Kombucha out of Magnolia Oolong was one of the first Oolong Kombucha that we have made around 4 years ago. It was delicious & popular back then & nothing really has changed. The tea for this Kombucha is called Magnolia Blossom Oolong & it comes from Guadong Province, in China. The tea is also known as Orchid Oolong or in Chinese Yu Lan. It is a scented Oolong & in this particular case as you can guess, Magnolia Flowers are used to give it an extra flavor. (Photo source 1*) The Magnolia Oolo
