These lamb kofta wraps are bursting with Middle Eastern flavors, featuring juicy lamb koftas seasoned with aromatic spices and served with a refreshing parsley and onion salad, all wrapped in soft pita bread. They make a delicious and satisfying meal for any occasion.
Ingredients: 500g lamb mince. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 tsp ground cumin. 1 tsp ground coriander. 1/2 tsp ground cinnamon. 1/4 tsp cayenne pepper. Salt and black pepper to taste. 2 tbsp chopped fresh parsley. 1 small red onion, thinly sliced. Juice of 1 lemon. 4 large pita breads. Greek yogurt or tahini sauce, for serving.
Instructions: Cumin, coriander, cinnamon, salt, black pepper, cayenne pepper, and chopped onion should all be mixed together in a bowl with lamb mince. Put the mixture on skewers and use them to make little sausages, or koftas. The koftas should be grilled over medium-high heat for 8 to 10 minutes, turning them over every so often until they are fully cooked. In a different bowl, mix the lemon juice, chopped parsley, and thin slices of red onion. Add pepper and salt. You can warm the pita breads up in the oven or on the grill. Spread some tahini or Greek yogurt sauce on each pita bread, then put some koftas on top. Finally, add the parsley and onion salad on top of the koftas. Wrap the food up and serve it right away.
