Lavender Bread (peasant loaf)
Hi y’all! I figured given the current state of everything, now would be the a good time to share a recipe focused around bringing calm and peace. I hope y’all enjoy this recipe as much as I do!
Correspondences:
Lavender: calm, peace
Salt: protection, purification
Ingredients:
1 cup warm water
2 1/4 teaspoons active dry yeast (or a .25 oz. packet)
1 tablespoon white sugar
4 tablespoons olive oil, divided
2 1/ 2 cups all-purpose flour
3 tablespoons culinary lavender*
1 teaspoon salt
*It is important to make sure you use culinary lavender (lavender meant for human consumption) as non-culinary lavender may contain pesticides or other chemicals*
Directions:
In a bowl, mix the sugar and water (the water should be warm, but not hot). Then stir in the yeast and let stand for 5-10 minutes, or until yeast is foamy.
Next, grind lavender into fine pieces using a mortar and pestle. Then, add 2 tablespoons olive oil, 1 1/2 cups flour, lavender and salt into the water and yeast. Mix until combined.
Add in 1 cup more flour and mix, adding additional flour as needed until the dough no longer sticks to the bowl. Afterwards, cover the bowl and allow it to rest in a warm place until the dough has more than doubled (this generally takes about 1-1 1/2 hours).
After the dough has doubled, grease a rimmed baking sheet with 1 tablespoon olive oil. Lightly dust a clean work surface with flour.
Then divide the dough into 2 equal pieces and shape them into an oval on the baking sheet.
Now, let the loaves rest, uncovered, for ~1 hour, or until doubled in size. During last 10 minutes of rising, preheat oven to 400 degrees.
Next, bake loaves in the preheated oven for 10 minutes. Then, remove and brush the remaining olive oil on the loaves. Finally, bake for another 10 minutes or until lightly golden. That's it, enjoy!

I’ve been baking since 9:30. Cranberry orange scones and lavender bread. I haven’t tried them yet so hopefully they turned out okay. This is my first time making lavender bread so I was worried it might be bitter 😓

Seriously guys, gals, and those of you who are both or neither.
So, full disclosure time (as if I’m not just screaming into the endless void of the internet). I like baking. I love it in fact. I make lavender bread and cookies with real flower garnishments, and pies. Dear jesus if you would have only tasted one of my pies. Baking makes me happy. So, this summer the goal is to take baking and decorating classes like Learn how to properly treat fondant and gum paste, and Build your buttercream skills (cute right?) And the ultimate goal which is Find a Bakery that will Actually let me Work There and Practice my Skills Even if I’m Regulated to Cupcake Organizer. I want to help do prep work in the mornings and decorate cupcakes and find out about the inner-workings of bakery life to see if it’s for me.
SO - if you know of any bakery’s around Huntsville that need a lackey or if you have tips for me I’m all ears, internet. I am all ears.
