Lemonade cookies are a zesty and refreshing treat that goes perfectly with a glass of lemonade. They have a soft and chewy texture with a lemon flavor burst.
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon lemon zest. 2 tablespoons freshly squeezed lemon juice. 3 cups all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/4 cup powdered sugar for dusting.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. A little at a time, beat in the eggs. Then, add the lemon juice and zest. Mix the flour, baking soda, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Spread out some space between each cookie by putting tablespoon-sized balls of dough on the baking sheet that has been worked out. Make each cookie a little flatter with the back of a spoon. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, leave them on the baking sheet to cool for a while. Move the cookies to a wire rack to cool all the way down. Sprinkle powdered sugar over the cookies after they have cooled. Have fun with these tasty lemonade cookies!
