Full of flavor, this Paleo lemon garlic herb roasted chicken is ideal for a filling, healthful supper. The chicken retains its juicy and tender texture thanks to the flavorful infusion of fresh herbs, zesty lemon, and garlic. It's an easy recipe that tastes great and will quickly become a family favorite.
Ingredients: 1 whole chicken about 4-5 pounds. 2 lemons, sliced. 4 cloves garlic, minced. 2 tablespoons fresh rosemary, chopped. 2 tablespoons fresh thyme, chopped. 2 tablespoons fresh parsley, chopped. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat oven to 425F 220C. In a small bowl, mix together minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, and pepper to create a herb paste. Pat the chicken dry with paper towels. Rub the herb paste all over the chicken, making sure to get it under the skin as well. Stuff the cavity of the chicken with sliced lemons. Place the chicken in a roasting pan breast side up. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165F 75C and the juices run clear. Once done, remove from the oven and let it rest for 10 minutes before carving. Serve the lemon garlic herb roasted chicken with your favorite Paleo side dishes.
