This vegan take on a classic dessert has a rich, saucy pudding and a tart lemon flavor. It's perfect for satisfying your sweet tooth without hurting animals.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1 tablespoon baking powder. 1/4 teaspoon salt. Zest of 2 lemons. 3/4 cup non-dairy milk. 1/4 cup lemon juice. 1/4 cup melted vegan butter. 1 cup boiling water. 1/2 cup brown sugar.
Instructions: Warm the oven up to 175F 350C. A 8x8-inch baking dish should be greased. Put flour, sugar, baking powder, salt, and lemon zest in a bowl and mix them together. Melt vegan butter and add it to the dry ingredients along with the lemon juice. Don't mix any further than that. Spread the batter out evenly in the baking dish that has been prepared. Put boiling water and brown sugar in a different bowl and mix them together until the sugar is gone. Do not splash the hot water on top of the batter in the baking dish. Put it in the oven and bake for 30 to 35 minutes, or until the top is golden brown and set. Spoon the sauce from the bottom of the dish over each warm serving.
