With the main cast, they have varying levels of sanity, Toriel would probably be at a 2 or maybe 3, Sans keeps his cool with a nice level of about 7, Papyrus is a 4-5, asgore is about 3-4 post war but used to be around a 6, Mettaton is a steady 5. Undyne and Alphys used to be around 8 but because of the experiments and subsequent blindness has driven them to about 3.
They are fairly different, you would be lucky to get past Sans in a genocide run cause as soon as he sees the dust on you, you are dust yourself. A Pacifist run is fairly difficult and you want to stay on Sans’ good side as he will help you through the game, He's not doing it for any main benefit but more to annoy everyone as this child was the last fragment they needed. Like the actual game there are different endings on who you kill and keep alive, he will act like he approves you killing his brother but its obvious he hates you for doing it. A true pacifist run will end up with monsters helping humans, a normal pacifist run will end up with monsters either killing or enslaving mankind. You can do a genocide run but it will be hard to get past Sans, but eventually you will tire him out.
The relationship between the brothers is kinda like love hate esk thing, sans usually ends up being called a cock sucker or even getting a crude drawing with a crappy insult written next to it by Papyrus. Sans cares a lot about his brother, even though he doesn't show it, but he will do anything to protect his bro in a time of need. Throughout the resets from Flowey, Sans has just given up and is just a lazy asshole.
Sans does indeed have a lot of secrets, but if you pressure him enough he might just shrug and tell one or two, he's got nothing to gain by hiding them, but most of them aren’t very pleasant. Some are the same and some are different.
