Fruit Rollup (Literally)
This is basically a burrito PB&J. I added fruit because hello, it's summer! It was so hot yesterday (90°F/32°C) and this was the perfect treat.
Ingredients 2 flour tortillas (sub gluten free if you like) 5 tbsp creamy peanut butter 3 tbsp strawberry jam (my favorite flavor) 1 banana 2 strawberries (more if they're small)
Spread peanut butter on tortillas, then microwave 10-15 seconds. The peanut butter will soften and the tortillas will be easier to roll.
Spread jam on top of peanut butter.
Slice up bananas and strawberries.
Spread fruit pieces evenly across tortillas.
Roll up like a burrito and serve. You can also roll leaving the ends open and slice into pinwheels!
