Okay, so I'm not a psychology major or anything related even, but thanks to the free access library in college I've learned some stuff so here's my take on why Eunji was still "friends" with the reader.
First of all, from what we've learned in this story, Eunji can't maintain relationships for a long time/her relationships are toxic or the guys she dates don't take her really seriously, she's in love with the idea of having the perfect man but she doesn't realize that it doesn't exist, and she will continue in this types of relationships if she doesn't change her mindset.
Second, she's still only friends with the reader bc she has never seen her as a threat, not only bc of how the reader looks, but also because of her anxiety issues and because she knew the reader liked her, my bet is that she assumed that the reader was a lesbian and that gave her some sort of fake self-confidence that she'll always have someone by her side who won't outshine her but also will love her and be loyal to her, the only thing she has to do to keep her by her side is giving her a little attention and that's it.
And now that the bomb dropped her life will turn upside down, because the super hot boy she thought that was in love with her was actually in love with the person she always considered her guard dog, she just lost 2 major things that built her confidence and I know she's going to be destroyed, god they're all fucked up and I can't even imagine what will happen in the next chapter, the characters are so complex and I love every detail about the story, really looking forward how everything will go down in the next chapter (Sorry for the long rant I just got really excited hehe)

I like how you noticed the fact that Eunji’s past relationships seem to be very short lived and incorporated that into how she can be rather shallow but at the same time hyper fixed on finding the ‘perfect’ lover ( aka Jungkook ) ( The MC mentions briefly in the first part how perfect Jk seemed as a boyfriend and how he is the first one of her lovers she genuinely approved of so it’s interesting to see how they initially both fell for his facade. )
And I love how you mentioned that Eunji never saw the MC as a threat! You can see throughout the entire story ( I especially tried to showcase it when Eunji caught them both in the same car when JK drove the MC home from the cafe, I feel like that scene should have evoked a bit of suspicion in any partner but Eunji doesn’t feel that and while that could of simply been the amount of ‘trust’ she had in her , it could more likely leans towards the inability to see the MC ever gaining the attention of Jungkook )
