🌶🌶🌶 spicy quesadillas for lunch today. Not quite in keeping with my under 500 cals theme this week but at 546 calories for this entire plate of spicy cheesy joy I think that can be over looked. I used Tesco jalapeño free from cheese (37g grated) 2 wholegrain wraps 1/2 a red onion diced A generous fork full of kimchi 1 1/2 cups baby spinach Just chop everything finely mix together and dived between the 2 wraps and toast in a non-stick pan.

🌶🌶Guys, guys, GUYS! I have FINALLY satiated my long standing yen for tteokbokki! After grumbling about how it was hard to get good rice cakes I suddenly had the epiphany that I had a bag of rice flour just hanging out in the pantry from making face scrub 🙄🙄🙄😅. So (armed with the power of google) I went forth into the unknown and fashioned myself some quite good tteok. I used Maanhchi’s recipe and added more water by eye to compensate for how dry the flour was. I tell you what though, oi my arms at knackered haha 😅 making rice cakes is a legit workouts!

Ps. I didn’t realise until it was too late I had no prong onion so had to sub is some chives from my garden but it still tasted good.☺️

Side note. I had to rewrite this 3 times as tumblr loves to just not post something so I lost the entire thing haha😅😓😪

🍠🌭🌶🥗Adding to my collection of under 500 cal meals (457 cal) Today we have 2 Linda McCartney rosemary and red onion sausages, mixed greens, sweet potato 🍠, kimchi and hummus ( lemon and coriander). I don't know what on earth keeps possessing me to have kimchi and hummus on the same plate but hey multicultural AF haha 😂😅

🥗🌶another less than 500 cal meal (465 today) I went all bougie 🍾😎and had quinoa today but I made sure to whisper kwin-oh-ah under my breath while I prepared it...ya' know, to keep my grounded and stuff 🙃. The aforementioned seed was accompanied by, broc', sweet red peppers, baby spinach, kimchi, hummus and my fave quorn burgs. I really don't know what possessed me to have hummus and kimchi in the same Buddha bowl but hey, too late now and it tasted good! 😂

🍅🌶😍🤤So what's the first meal I go for when I get back form my foray to Canada🍁? A cheap as hell can on Lidl Tuscan bean soup and. A slice of toasty soda bread of course haha! 😅 Hey (what can I say) after experiencing the daylight robbery that is wholefoods for the past week my little heart yearned for something warm and tasty that costs less than 50p 😜 Having said that I did smuggle 5 boxes of diaya deluxe mac n cheese 🧀 😬
