Ingredients: 1/2 cup coconut flour. 1/2 cup fresh blueberries. 4 large eggs. 1/4 cup unsweetened almond milk. 1/4 cup melted coconut oil. 1/4 cup erythritol or keto-friendly sweetener. 1 tsp baking powder. 1/2 tsp vanilla extract. Pinch of salt.
Instructions: Warm the oven up to 175F 350C. Put butter or parchment paper inside a loaf pan. Add eggs, almond milk, melted coconut oil, erythritol, and vanilla extract to a bowl and mix them together using a whisk. When you're done, mix in the baking powder, salt, and coconut flour. Mix until everything is well mixed and a smooth batter forms. Add fresh blueberries to the batter slowly. Put the batter into the loaf pan that has been prepared and spread it out evenly. After the oven is hot, bake it for 40 to 45 minutes, or until a toothpick stuck in the middle comes out clean. After 10 minutes of cooling in the pan, move the bread to a wire rack to finish cooling before cutting. Cut and serve. Have fun!
