This creamy keto pumpkin soup is a healthy and comforting meal that is great for cold nights. Because it's low in carbs and high in flavor, it's a great choice for people on a ketogenic diet.
Ingredients: 1 can 15 oz pumpkin puree. 2 cups chicken broth. 1 cup heavy cream. 2 cloves garlic, minced. 1 teaspoon ground ginger. 1/2 teaspoon ground nutmeg. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the minced garlic and cook until it smells good. Add the chicken broth, ground ginger, ground nutmeg, and pumpkin puree and mix them in. Bring the mixture to a low boil, then cook it while stirring it every now and then for 10 to 15 minutes. Blend the soup until it's smooth with an immersion blender. Add the heavy cream and season with pepper and salt to taste. Simmer for five more minutes, then take the pot off the heat. If you want, you can serve it hot with a drizzle of heavy cream and a sprinkle of nutmeg on top.
