Ingredients: 2 cups all-purpose flour. 1 1/2 cups granulated sugar. 1/2 cup unsalted butter, softened. 1/2 cup vegetable oil. 4 large eggs. 1 cup buttermilk. 2 tsp vanilla extract. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. Blue food coloring optional. Edible glitter optional. For the frosting:. 2 cups unsalted butter, softened. 4 cups powdered sugar. 2 tsp vanilla extract. Blue food coloring optional. For the ruffles:. 1 batch of fondant store-bought or homemade. Blue gel food coloring.
Instructions: Heat the oven to 350F 175C, and then grease and flour two 8-inch round cake pans. Melt the butter and mix it with the vegetable oil in a large bowl until the mixture is light and fluffy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. Mix the flour, baking powder, baking soda, and salt together in a different bowl. Slowly add the dry ingredients to the wet ingredients, mixing them in with buttermilk every so often. Start with the dry ingredients and end with the buttermilk. Don't mix any further than that. If you want it to look like Cinderella, you can add a few drops of blue food coloring. To make the color even, mix. Spread the batter out evenly in the cake pans that have been prepared. Bake for 25 to 30 minutes, or until a toothpick inserted into the middle comes out clean. While the cakes are still warm, take them out of the pans and let them cool completely on a wire rack. While the cakes are cooling, make the frosting by beating the vanilla extract, softened butter, and powdered sugar together until the frosting is smooth and creamy.
