Sharing my personal chef secrets for how I do mashed potatoes for clients so they reheat beautifully and stay light and fluffy. Make-Ahead Mashed Potatoes (Mashed Potato Casserole) are smooth, creamy, slightly cheesy, garlicky, a little bit tangy and a whole lot delicious.

Best of all, they can be made two days ahead and baked when you need them or two hours ahead and kept hot in your slow cooker!

You can make these Cheeseburger Sliders ahead of time or for a quick meal. They're not very big, but they taste great!

Ingredients: 1 lb ground beef. 1/2 cup diced onions. Salt and pepper to taste. 12 slider buns. 12 slices of American cheese. Lettuce leaves. Sliced tomatoes. Ketchup and mustard for topping.

Instructions: Warm up your grill or pan on the stove by setting it on medium-high heat. Add the diced onions, salt, and pepper to the ground beef in a bowl. Combine well. Make 12 equal portions of the beef mixture and shape them into small burger patties. The patties should be grilled or cooked for two to three minutes on each side, or until they are done the way you like them. Put a slice of American cheese on top of each patty in the last minute of cooking and let it melt. Fry or grill the slider buns for a few seconds on each side while the patties are cooking. On the bottom bun of each cheeseburger slider, put lettuce leaves and sliced tomatoes. Then, add a cooked patty with melted cheese. If you want, you can put ketchup and mustard on top of the patty. To finish the slider, put the top bun on top of the assembled ingredients. Enjoy while hot!
